Claire Liégent winds Greek saffron, the kind that golds your fingers for three days, into Moroccan bitter almond and Madagascar clove. The first breath grips the back of the tongue, all discipline held over heat that wants to spill. Then Tunisian orange blossom floods the room and the heart candies over, sweet enough to shut your eyes. Spun sugar and buttered notes pack the middle, dense and slow.

The base holds. Madagascar vanilla and Sri Lanka cinnamon set resinous and firm, sugar without greed. Toasted hazelnut roughs the edges true. Australian sandalwood draws it down low, where it cools and roots. No leather, no tobacco, nothing to coarsen it. This is the candied heart held close and contained, well past dinner and into the night. The next morning the saffron still marks the wrist, quieter, harder to name.

A January evening, a dinner that runs long. You carry the dessert in on a white plate, and the room quiets before anyone tastes it, because the scent on your wrist reached the table first: saffron, warm sugar, bitter almond. Someone asks what the kitchen is baking. Nothing is baking. You cut the Saint-Honoré, pour what remains of the wine, and let the cinnamon on your skin do the answering. The sandalwood stays with you on the walk back.
